kadhai paneer

INGREDIENTS:
1.1 onion finely chopped.
2.2 tomatoes finely chopped.
3.2 capsicums chopped in half inch squares.
4.125-150 gms cottage cheese cut into 1⁄4 inch cubes.(you may use store bought or home made).
5.2-3 green chillies.
6.1 tbsp of edible oil.
7.1 tsp salt.
8.1⁄2 tsp cumin seeds.
9.a pinch of asafoetida.
10.1⁄4 tsp of dry ginger powder or 1⁄2 tsp of ginger paste.
11.1⁄4 tsp of turmeric powder.
12.1⁄2 tsp of coriander powder.
13. 1⁄2 tsp of garam masala.
14.1⁄5 tsp of red chilli powder.
15.cilantro or coriander leaves for garnishing.
Method:
1.Wash and cut all the veggies as required.
2.Take a small wok (kadhai) and heat it on a high setting.
3.Pour in the edible oil.Now add cumin seeds and asafoetida.Stir them.
4.Next add the chopped onions and capsicums together and lower the heat a little.Stir them well.Sprinkle some salt and cover it for 2 mins.
5.Again stirring the vegetables, add all the dry spices like coriander powder,dry ginger powder,garam masala,turmeric powder,red chilli powder,salt .Also add the chillies now.Stir the spices well so that all the veggies are nicely coated .
6.Now add the chopped tomatoes or tomato paste /puree (depending on availability) and stir the mixture again.
7.After about 2 mins when the mixture has dried out add the cottage cheese or paneer and stir the mixture.

8.Cover it for 1 min and let it cook on medium heat.
9.Open the lid and when you feel all veggies have roasted well and paneer has swelled a little and cut be cut with a spoon,then turn off the heat.
10.Garnish it with cilantro and your mouth-watering kadhai paneer is ready.
