>Ingredients for veggies mix:
1.red ,yellow,green bell peppers
2.blanched potatoes
3.blanched carrots
4.onions
5. fried cottage cheese(paneer) cut in cubes or tofu
6.mushrooms
7.blanched broccoli
8.noodles cooked al dente
9.garlic paste
10.ginger paste
11.black pepper powder
12.salt
13.edible oil/butter
14.4-5 cabbage laeaves
Ingredients for sauce:
1.ginger paste
2.edible oil
3.garlic paste
4.corn flour 4-6 Tbsp
5.tomato ketchup
6.soy sauce
7.spring onions
8.chilli sauce.
METHOD:
You may add any veggies of your choice like green french beans,cauliflower,baby corn,zucchini etc depending on their availability and your taste.Just remember to blanch some veggies before stir frying because it saves time and energy.Blanching is the process in which we add vegetables (peeled and cut)into boiling saline water only for 2-3 mins.Then turning them into iced water to prevent overcooking.Tofu or paneer needs to be roasted in little oil before beginning with the recipe.
Noodles are par-boiled and cooked al -dente.
There are variety of sizzlers: tikki sizzler,falafel sizzler, etc.
This one is with noodles.
- To begin with heat 1-2 tbsp of oil /butter in a wide pan/wok.
2.Now add onions cut into half inch squares.
3.Now add all the bell peppers and mushrooms.
- You may add grated ginger at this stage for an extra flavour.Then add the remaining blanched vegetables.
5.Finally add the paneer and stir mix all of them together.
6.Add salt and black pepper powder.Keep these veggies frying while you make the sauce for them in another pan.
For sauce:
1. Heat the pan ,add 1 tbsp edible oil.
2.Now add the ginger garlic paste.Also add the dried whole chillies .
3.After this add the soy sauce to it.
4.Then dissolve the cornflour in half a cup of water and add it to the above mix.Continue stirring.
- When it starts thickening then add tomato ketchup and very little salt.
6.Now let it cook and thicken to the desired consistency level and lastly add spring onions to it.
For Serving:
1.Heat a non-stick griddle (or heavy tawa). You may use any cast-iron vessel for this purpose.Cast iron can retain heat for longer periods,hence to get all the smoke you may use a heavy base vessel .We can get sizzler plate from the market too.
2.Line the tawa with 4-5 cabbage leaves once it is hot enough.
3.Then place the noodles,veggies and sauce on these leaves and serve hot.
