cheesy cutlets
Bored of eating potato stuffed fried food?? Want to delve in something different for your weekend breakfast? Here is the recipe for “Cheesy Cutlets” crunchy from outside and soft inside.
INGREDIENTS:
1.cottage cheese cut into small cubes – 1⁄2 cup
2.onion finely chopped -1⁄4 cup
3.capsicum or green and red bell pepper finely chopped -1⁄4 cup
4.salt to taste
5.black pepper to taste
6.edible cooking oil -5+1 tbsps.
7.A pack of white bread/brown bread.
8.1⁄2 cup of milk.
9.sweet corn -1⁄4 cup.
METHOD (For filling):
1.Take a wok or a shallow pan.Heat oil in it on high setting.
2.Add the onion,bell peppers and saute them till the onion turns pink.
3.Now add salt ,black pepper to them and continue stirring them occasionally for 2-3 mins.
4.Lastly add paneer to it and saute the mix for 1 min and turn off the heat.
5.Let the mixture cool for 5 mins.
Method (for crust):
1.Take a piece of white bread or brown bread.Now take a bottle cover or some other round shape with sharp edges.
2.Cut rounds from the bread such as the brown corners are removed and a circle is cut out from the bread.(you may use the bread corners as bread crumbs in aloo tikki or cutlets or in tomato soup .So don’t throw them.)
3.You may also buy a heart shape bread cutter from any dollar store like i got .
4.Remember to cut circles in pairs.
5.Next dip the cut pieces one by one in milk or liberally apply milk on bread and squeeze out the milk by placing the pieces in between you palms.
6.Now fill the filling you have just prepared about 1-2 tbsps or may be less on one piece and close it with the other piece by applying milk at the edges of the filled piece.Make sure the filling is at room temperature.mIlk acts like a glue here.
7.Make such discs and heart shapes and you may keep them aside for 5-10 mins or you may freeze them in refrigerator for an hr for later use.
8.After about 10 mins heat the oil in a wok -about 5-6 tbsp.These discs don’t need much oil.And if you want you may preheat the oven to 325 degree F oil-free cooking and bake them for 10-15 mins.
9.Now fry them on high setting one by one because they are large and delicate to handle.Turn them and fry on both sides.
10.As soon as they turn golden brown take them out with a strainer on a tissue lined plate and serve hot.
11.You may serve them with chutney or sauce of your choice.
