Khandvi

Want to kill blue moods of this cool season? Then try this recipe, for which you may not have to go for groceries. This dish was originated in Gujarat, but now it is famous world wide. Because of its unique taste and easily available ingredients ,this dish is a big hit with everyone. The only trick is to get the right consistency while heating the curd-besan mixture. You may not get it right in first attempt,even i failed.But if you are keen to make it and have the perseverance and patience you may try this recipe and its all worth the efforts.

INGREDIENTS
A. For the KHANDVI BATTER:
1. 1 Cup Gram Flour( Besan)
2. 34 cup sour curd/ yoghurt
3. 2.25 cups of water or 3 cups of buttermilk
4. a pinch of asafoetida(hing)
5. 1 tsp of ginger chilli paste
6. 14 tsp turmeric powder (haldi)
7. 23 tsp salt or according to the taste.

B. For the Filling:
1. 2 Tbsp of grated coconut or coconut powder
2. 2 tbsp of grated carrots (gajar)
3. 1 Tbsp of pomegranate ( anar)
4. 2 Tbsp of chopped Cilantro (coriander leaves or hara dhania)

C.For the Tempering/Seasoning:
1. 1 tbsp oil
2. 8 to 10 curry leaves(kadi patta)
3. 1 tsp mustard seeds(rai)
4. 2 tsp white sesame seeds(safed til)
5. 1 green chilly(hari mirch), chopped or ½ tsp red chilli powder

Method :
1. Take a microwave safe vessel, add curd(unbeaten), besan,haldi,salt,hing and beat them or mix them well either with a hand-held beater or electric mixer.

  1. Now slowly add water little by little and continue mixing. Add the required water and then add the ginger chilli paste and mix well all the ingredients.
  1. Keep the bowl in the microwave and heat it for 1 and a half minute. Take it out and mix it well .This is how it would look after this time.
  1. It would take approximately 7.5 mins to get the right consistency.After every min you need to take out and stir the mixture so that it gets cooked uniformly without forming any lumps.

  2. In the meanwhile ,grease a plate or your kitchen countertop with little oil.I had spread on the countertop so that i got sufficient space in spreading the batter.

  3. For checking the consistency spread a tsp of batter on the countertop and try to roll it as it cools down.If it is not rolling ,then cook the batter again for 30 sec in microwave and check again.

  1. This time I got it right and hence I spread the batter quickly before it cools down and solidifies in the vessel , on my kitchen countertop. Then i sprinkled chopped coriander leaves on it.
  1. Now cut the strips 1 inch wide from the spread batter.Roll them one by one.

  2. Keep the rolled khandvis in a plate. Now prepare the seasoning and spread it evenly on all the khandvis.
    Optionally you may prepare the seasoning and fill inside the khandvi before rolling them.

  3. For the seasoning ,heat oil in a pan. Add curry leaves,mustard seeds. Let them crackle. Now add the sesame seeds and green chilly. Now turn off the heat.Seasoning is ready.

Garnish it with coriander leaves as per your choice. Enjoy with Tea and other snacks.
