Eggless coffee cake(microwave)

One fine day sitting idle I thought of making something special for someone special. No, not for my better half but for my friend who was One and a half(i mean expecting) and then suddenly coffee striked my mind ,because she loves its smell.

So this is what I came up with.All the coffee and cake lovers,surprise your better half with this ultimate combination this valentine. It is surprisingly an easy recipe to reach his /her heart.

Ingredients:.
1. 1 cup all-purpose flour (maida).
2. 1 & 12 tbsp instant coffee powder.
3. 14 cup boiling water.
4. 12 tsp baking soda.
5. 1 pinch salt.
6. 1 cup sugar.
7. 12 cup oil (OR ½ cup melted butter).
8. 2 tbsp honey.
9. 1 & 12 tsp vanilla essence.
10. 1 cup milk (room temperature).
11. Nutella hazelnut spread.
12. 14 tsp baking powder.
For Chocolate glaze:
1. 2 oz semi-sweet chocolate chips.
2. 4 Tbsp sugar.
3. 1 Tbsp milk.
4. 1 Tbsp water.
5. 34 Tsp vanilla essence.

Method For making base :
1. Mix Pure coffee powder in boiling water and keep aside. If you are using coffee-chicory blend then double the quantity of coffee , since it is milder than 100% pure coffee.
2. Take a bowl and mix flour,salt and baking soda and baking powder in it.
3. In a separate bowl beat the butter and sugar together to form a fluffy solution.
4. Transfer the contents of 2nd bowl into 1st and add vanilla essence and honey to the mixture.Also add milk and keep stirring.
5. Now add the beaten coffee solution in the batter and mix well.
6. Take a microwave safe bowl (glass or plastic) and grease it nicely with oil. I had also coated the inner sides with parchment paper. Now pour the batter in this bowl.
7. Make sure your bowl is 2/3rd filled and not upto the brim. Now microwave it uncovered for 8 to 9 minutes.
8. Cake is done when you start sensing the nice aroma of coffee. You will see blisters on the surface initially.
But when you allow it to cool for half an hour, then they will vanish and you get a smooth top after inverting the cake on a round card -board or plate.

Keep the cake in refrigerator to cool it further for an hour or more.

For preparing Chocolate Glaze:

  1. Microwave the chocolate chips dipped in milk for 1 min and stir well.
  2. Add water,sugar and vanilla essence and mix them well.
  3. Your glaze is prepared. Now pour it slowly on the cake and keep the cake again in fridge to get a smooth shiny texture.

In the end I have topped it with hazelnut spread to carve a design.

You may decorate using your tips and baking tools with your favourite icing .
