Raisins cake
buy the cake mix from the shop and add (1⁄4 tsp Baking soda+ 1 tsp white cider vinegar) or (half a banana) instead of egg in the mix. Or else the recipe:
Ingredients:
1. 1 cup all -purpose flour (maida)
2. 1⁄4 tsp baking soda
3. 1⁄2 tsp baking powder
4. 1⁄2 cup of heavy whipping cream(optional)
5. 1 cup butter or ghee (clarified butter)
6. 1 cup sugar
7. 4 tbsp Raisins/chocolate chips
8. 1 tsp vanilla essence(optional)
Method:
1. Preheat the oven to 350 degree F/180 degree C.
2. Sieve in all the dry ingredients first in a bowl viz. flour,baking soda and baking powder.
3. In a separate bowl beat the whipping cream till it gets fluffy and forms peaks. Then add butter and sugar in it and whisk a little.Don’t whisk on high speed in electric beater since it separates out the butter and we don’t need that. Instead you may use hand-held whisker at low speed or beat it till gets fluffy.
4. Now add the fluffy mix in another bowl or vice versa and gently fold in the batter till it gets a smooth texture and evenness in colour. Again don’t stir it too hard that the fluffiness disappears.
5. The consistency of the batter should not be too thick and too thin,just the consistency of pakoda.If you feel that it is too thick then add some milk 2 Tbsp each time and if it too thin then add some maida or milk powder 1 tbsp each time to get it right.
6. In the end add the Raisins and lightly mix them.
7. Grease the baking pan 9″ circle with ghee or cooking spray. Place the butter paper/parchment paper in the bottom of the pan.
Since my batter was more so i poured it into cupcake tray to make muffins out of it.
8. Now pour the batter in the pan and keep it in the oven for 30-35 mins. Remember the pan should be just 2/3rd filled.
9. After 35 mins I took it out and checked the center ,if it comes out clean and the cake has left the sides of the pan.Then it is cooked.Also the colour would turn brown.
10. Let it cool down to the room temperature.It may take half hour.
11. Now take a knife and run through the circumference of the pan. Place a plate or a cardboard over it and flip it over the plate.
