Mango -Cherry cake

Sometimes idleness creates ideas which bring unforgettable pleasure in our life.Just like I was remembering my childhood days when I used to eat whole 1 mango without peeling and cutting it and relish all the juice slowly and slowly to tease my sister who had just finished eating 3 mangoes. Just then, she realized that I am having more fun than her by being slow,so she would pick up another mango and imitate me.Here in USA,but juicy ,ripe mangoes are available only in dreams. So I thought of making a mango cake with some nice topping of jello-gelatin.

Ingredients:
1. Mango pulp – 12 cup (sweetened or from fresh ripe mangoes)
2. Dried cherries- 2 Tbsp
3. All- purpose flour – 12 cup
4. Sugar -12 cup or according to taste
5. Butter – 1 Stick or 12 cup
6. Heavy whipping cream – 4 Tbsp
7. Milk (optional ,if needed 1 Tbsp)
8. Baking Soda -14 Tsp
9. Baking powder – 12 tsp
10. salt – 14 tsp
11. Mango essence (optional) – 12 Tsp

For Jelly:
1. Jello gelatin or you may use agar-agar which is a vegan replacement of the same.
2. water half cup.

For decoration:
1. Blue Frosting or you may use white frosting and mix blue food colour in it to get the same.

Method :
1.Preheat the oven to 350 degree F.Prepare the cake pan by using cooking spray or ghee(clarified butter), by coating the base and the side walls.

  1. Take a bowl, and add melted and cooled butter in it.Now add sugar in it.Alternately you can grate the butter in sugar.Whisk them together to form a creamy paste.
  1. Take another bowl and add flour,baking soda,baking powder and salt to it. Sift them through a sieve.
    4.Add the mango pulp to the wet ingredients and mix them well. Now mix the contents of 2nd bowl in 1st and continue whisking.
  2. Depending on the consistency add whipping cream to get the right consistency that is of pakodas.
  1. If the batter is too thick add some milk slowly 1 Tbsp each time and give it a stir and if the batter is loose then add some milk powder to get the right thickness.
  2. The batter will get fluffy and frothy with an electric beater.Lastly add the mango essence and the dried cherries and stir them well.
  1. Pour your batter in already greased cake pan.Keep it in the oven and bake for approx. 35 -40 mins.
  2. Take it out and let it cool to the room temperature.
  1. In the meanwhile prepare jelly . So take a pan and bring the water to boil. Make sure you take a microwave safe disposable flat kind of round pan.If not available then boil it in a steel or non-stick pan on the stove.
    The reason of using disposable pan is when it sets in,it is easy to take it our whole in one piece.
    11.Add 1 Tbsp of the jello powder to the boiling water and stir it well till the water changes colour and the small particles disappear.
  2. Now take it off the heat and let it cool in the refrigerator for half hour.
    13.I took it out after an hour.Till that time my cake has cooled down.So scrape the sides and keeping a plate or cardboard sheet on the top turn it upside down on the platter.
  3. Similarly once the gelatin has set ,turn it on the cake with a pat on the back of the vessel,and it comes out easily.
    15.But you may decorate it like this as I have done .
