Kesari Malpua

Holi is approaching and so our excitement for it. Holi is an Indian festival in which people play with colours ,flowers and water and with a spirit of oneness. So how can we forget the malpua ,which is made in almost every house of rajasthan during this festival. It is a kind of Indian pancake which tastes heavenly ,especially after playing a rigorous holi.

It can be made by two methods : one is deep frying and the other is shallow frying on a griddle or shallow pan. Since most of the people prefer healthy but tasty recipes,hence i have followed the second one i.e. shallow frying.

Ingredients:
1. All purpose flour – 12 cup
2. Milk – 1 liter
3. home made mawa 12 cup
4. Sugar- 2 cups
5. Oil – 4 Tbsp
6. Cardamom finely ground – 2 tsp
7. Pistachios finely chopped – 4 Tbsp for garnishing
8. Saffron strands – 20 (optional)

Method:
1.Boil the milk in a pan such that it reduces to 2/3rd of its quantity i.e. it forms a rabdi. Also add the saffron strands in the milk so that you will get a light yellow colour of the milk or rabdi.

2.Now take it off the heat and add the khoya and flour in it and stir it well. Let it stand for 1 hour. Alternatively if you like the malpua topped with rabdi,you may boil 2 litres of milk and reduce it to rabdi consistency. Then use half of the rabdi in making malpua and the remaining half for topping or garnishing.

3.In the meanwhile ,prepare the sugar syrup. For this take 2 cups of sugar and add 1 and half cups of water to it in a pan. Add the cardamom powder or ground cardamom to it ,which gives an aroma and flavour to it.Let it cook till all the sugar dissolves. The syrup should be thin like that of gulab jamun and let it cook on high heat for 3-5 mins after you see the water starts boiling. Make sure you turn it off before it forms thread.

  1. Now stir the mixture of malpua ,heat a non-stick griddle.The batter should be of pouring consistency. Add 2 tbsp of oil on the tawa and spread it all over.

  2. Pour the batter in the pan or on the griddle and spread it gently with the ladle.

  3. Let it cook till it get bubbles on one side and leaves the sides at the bottom. Now flip it over and fry it from other side too.

  4. When both sides are cooked and turned golden brown,remove from the griddle and dip them in the sugar syrup.Make sure it is still soft when removed from pan/griddle,no need to crisp it.

  5. Just dip them in sugar syrup for 5 -10 mins and remove them. Don’t dip them in syrup for long else they will crumble.

  6. Garnish them with cut pistachios.
