Veg Quesadilla

> Yesterday night, I learnt a new recipe from my dear friend Tripta – A veg Quesadilla ,which surely included veggies other than just “cheese”. I ate to my heart’s content, and now I want to share the yummy and quick recipe of making quesadilla at home with you all using minimals.
Tortillas are mexican wheat breads (similar to indian roti) but made of Maida or (all purpose flour) which are readily available here in U.S. in any store. Although traditional tortillas were made from maize flour ,we are using here the flour tortillas.If you don’t get the tortillas near your store,you may use left-over chapati or roti too. But some would prefer fresh rotis,so for them I would say to knead a soft dough of maida,ghee,salt and water.
Ingredients:
1. Store bought Tortillas (whole wheat soft)
2. Ranch /Sandwich spread/ Thousand Island dressing of your choice
3. salt to taste
4. tomato ketchup
5. Cabbage- 1⁄2 cup finely chopped
6. Carrots-1⁄2 cup grated
7. capsicum/bell peppers – 1⁄2 cup finely chopped
8. green chillies -finely chopped according to taste
9. black pepper- 1⁄4 tsp
10. cottage cheese – 1⁄2 cup(optional)
11. Mozzarella cheese – 1 cup grated
12. Cooking oil – 1⁄2 cup or as required
Method:
1.Finely chop all the vegetables viz capsicum,cabbage,carrots and chillies. Also grate the cottage cheese and cheese.
- Heat a non-stick pan.Add 2 Tbsp of vegetable oil. Add all the vegetables,salt and black pepper and stir it well. Saute it till all the moisture evaporates and the vegetables are cooked.
If you like them little raw,you may skip the 2nd step. Now mix the paneer and cheese with this veggie mixture.
Take an iron skillet and heat it on medium. Take out 1 tortilla from the packet,place it on the counter and now apply the sandwich spread(here comes your taste and choice) and ketchup and spread it with a spoon.
- Now place the veggie filling in the semi-circle of the tortilla and close the other half on it such that it forms a semi-circle patty.
- Place the filled tortilla gently on the heated skillet. Add few drops of oil and let it cook on one side.
- Now flip the other side and let this side cook as well with some oil.
8. Once cooked on both sides and the edges are brown and cooked ,remove it from heat and serve with guacamole or any dip of your choice.
