Strawberry Souffle

> Summers are here and so our passion for ice-creams,souffles, mousses, ice-slush,shakes. So here’s my recipe for super cool strawberry souffle which needs just 3 ingredients and no baking recipe. Yes, for garnishing you can be as creative as you want. This special dish will beat the heat and soothe your dry throat. Since I am vegan, so again this recipe is eggless too.

This elegant souffle could be served as a dessert for some invited guests and could be served as a refreshing drink too. I would call it somewhat a mixture of ice-cream and shake.With less time in hand and less ingredients this truly is one recipe which comes as a big reliever for you.

Ingredients:
1. 1 can condensed milk (14 oz)
2. 4-5 Tbsp strawberry paste
3. Strawberry gelatin or [agar -agar (vegan substitute for jello gelatin)] – 1 packet
4. Sugar- 2 Tbsp (optional)
For garnishing:
1. Whipped cream or frosting
2. sliced strawberries
3. Dried cherries
4. Chironji/Buchanania lanzan or other nuts like pecans,walnuts,almonds etc.

Method:
1. First of all take almost 12-15 strawberries and rinse and cut their leaves from the top .Also add sugar if you like more sweetness,or depending on the taste of strawberries and let them caramelize for 3-5 mins.

  1. Now take a blender or chopper and crush them into juice with it.

  2. Take a bowl and add condensed milk in it.

  3. Prepare gelatin by adding agar-agar or jello crystals in boiling water as mentioned on the packet. For agar, take 2-3 stems( since it is thin long also called china grass ) break them and add to the boiling water. Also add some strawberry flavor and red food color once it is dissolved finely. Cook or 2-3 mins or until dissolved.

  4. In the same bowl as in step 3, add the gelatin solution and whisk it with a whisker or blend it nicely.

  5. Now add the strawberry crush to it ,and stir it again with hand-mixer or whisk.

  6. Pour the mix in shot glasses or a bowl or a glass and cover it with plastic wrap.

  7. Refrigerate it for 3-4 hrs and serve chilled. Now after it is set, you may garnish it with frosting, dried fruits, or pecans/nuts/chironji as per your taste or simply sliced strawberries.
