Tres Leches Cake

> Tres Leches cake is a Mexican cake which is kids’ favourite and loved by all. The word “Tres” means three and “leches” means milk, since it is made of three kinds of milk viz. Sweetened condensed milk, evaporated milk and milk. I always wanted to make it, but was in a dilemma that how will I make it eggless and yet spongy and milky the way I like it. But then I came across this Flaxseeds ,which I used in this recipe to get the perfect sweet milky Tres Leche cake. This is one recipe which allows overbaking of cake too, since the soaking part of cake in milk compensates for it. I call it feeding milk to my cake. >

1. All purpose Flour- 3⁄4 cup + 1⁄4 cup
2. Baking Soda – 1⁄4 tsp
3. Baking Powder – 1⁄2 tsp
4. Vanilla Extract – 1 tsp

6. Butter – 1⁄4 cup
7. Sweetened Condensed Milk – 1⁄2 can or 7 oz
8. Milk – 1⁄4 Cup
9. sugar – 2 Tbsp
For drenching cake in milk:
1. sweetened condensed milk- 1⁄2 can or 7 oz
2. Evaporated milk – 5 oz.
3. Milk – 1⁄2 cup
For Icing/frosting :
1. Heavy whipping cream – 1⁄2 cup
2. Sugar – 1 tbsp
METHOD:
Take butter and sugar in a bowl. Whisk or beat it till it changes color and gets fluffy.Since this cake is already very sweet I didn’t add sugar.
In the 1st bowl add the condensed milk and whisk or mix it nicely with a hand-whisk or beater or hand-held mixer. Remember for making this cake you don’t need to buy an elctric mixer ,all the steps could be done with a whisk or spatula too.
In a separate bowl, sieve in the All-purpose Flour or cake flour with baking soda+baking powder. Also for every egg replaced add 1⁄4 cup flour extra to the cake recipe to get that structure. For cookies or muffins, you don’t need to add extra flour.
Now add the flax gel Cubes. My 2 cubes equals 45 ml or 3tbsp of flaxgel or 1 egg. I measured them while pouring in the tray with a food syringe. Again beat them till you see all well mixed.
Also add vanilla extract now.
Now slowly keep on adding the flour mix in this wet ingredients bowl and whisk them in between. I added the flour in 3 portions. If you feel the mixture is too dry, add milk too in parts.
The batter should not be very watery or very solid, it should be of medium consistency which has a flow but a thick one.
7.When your batter is ready transfer it to a tray previously greased with non-stick cooking spray /ghee/oil. Keep it in a preheated oven at 350 Degree F.Also pat slightly for spreading it evenly or even it with a flat spatula like this.
I kept it for 30 mins exactly. It usually takes 30-35 mins depending on the type of oven. Check by inserting a toothpick in the center of the cake ,if it comes out clean,the cake is ready.
Keep it outside and let it cool a bit ,not fully just partially.
See the cake top. I usually don’t invert this cake because it helps to get softer on the top if we feed the milk on the top of the cake.
But for you , this is the back of the cake.
In the meanwhile , mix all the 3 kinds of milk in a container. Don’t cool the cake fully ,its better to pour the milk on lukewarm cake ,since it helps fast absorption.
Transfer the cake in a wider pan type or tray which has walls on the sides. Now poke holes with a fork all over the cake.
Start pouring the milk mix on the cake spoon by spoon. You will see the cake is absorbing faster initially but slows down later. Because as the cake cools down the absorbing nature decreases. Don’t worry and keep it aside for 20-30 mins so that all the milk is fully absorbed.
I have decorated it with frosting and sprinkles. But this cake tastes delicious without any frosting too!!
For preparing the frosting, whisk heavy whipping cream nicely for 10 mins with hand whisk and then add sugar till it gets fluffy. Using a flat edge spatula or knife,decorate your cake using this frosting. You may add colors and gently fold it to make colored frosting.
