Instant Milk cake

Is your sweet tooth craving like mine? And you don’t have much time and patience to gather all the ingredients and prepare some Indian sweet.. then this is the right recipe for you.

Milk cake is synonymous to Kalakand for some people but I found the taste and texture different from that of kalakand in this recipe. It could be called instant kalakand because of the least ingredient-combination and less time to prepare. It is so simple that even a novice could try it without much efforts.

INGREDIENTS:
1. Ricotta Cheese (whole milk/part skim) – 15 oz.
2. Sugar -12 or 34 cup
3. Black Cardamom powder – 12 tsp (optional)
4. Golden Raisins – 1 tbsp(optional)
5. Sliced almonds – 3 tbsp (optional)

METHOD:
|Preparation time : 2 mins | Cooking time : 35 mins | Makes 20-24 pieces |
1. Take a bowl and add the ricotta cheese in it. If you are using from the refrigerator , first bring it down to room temperature. Here the quantity of sugar depends on the type of ricotta you are using. If you are using whole milk ricotta then add just half cup and for part skim ricotta add three-fourth cup of sugar.

  1. Then add the cardamom powder, raisins to it. Apart from hard nuts like almonds, pistachios etc. add all the ingredients. You may use nutmeg powder, saffron strands , chironji, cashews ,walnuts etc ..

  2. Mix well all the ingredients with a spoon.

  3. Preheat your oven to 375 Degree F.

  4. Grease an oven safe shallow tray with cooking spray or oil.

  5. Once your oven is preheated add the contents in the tray, and bake for 30 mins or till the browning of edges start.

  6. Bring the tray out and sprinkle the sliced almonds /nuts on the top. Don’t dare to touch the top ,because it would be bubbling hot.
    This is how it looked after 20 mins.

After adding almonds, this was the look.

  1. Place in the oven again for 5 more mins. Let the milk cake turn lightly brown and then take it out of the oven.

  2. Let it cool for 25-30 mins to room temperature.

I further cooled it for 20 more mins in refrigerator. But its not necessary.
