Aloo tikki Chaat

Who doesn’t like Aloo tikki chaat/ Ragda petis?? Weakness of every woman ;)…So when it comes to preparing at home you hate it, because of the time consumed and exact taste.. No after this recipe, you won’t search Tikki outside, rather just start making it every now and then.. Yes it is not only delicious but also time saving recipe..

INGREDIENTS:
1. Cooking oil – 2 tbsp
2. Boiled potatoes – 3
3. Salt to taste – use less than required
4. Red chilli powder- l/2 tsp
5. Chaat masala – 2 tsp
6. Fennel powder(saunf) – 12 tsp(optional)
7. Coriander powder (dhaniya)- 12 tsp (optional)
8. Arrowroot powder (ararot) – for dusting (optional) or you may use Corn starch too.
9. Green dip(dhaniya-pudhina chutney) – 2 tbsp or to taste
10. Curd/yoghurt(dahi)- 4 tbsp or to taste
11. Brown dip (Imli ki chutney) – 2 tbsp or to taste

METHOD:
| Preparation time : 5-6 mins | Cooking time : 12 mins | Serves 2 persons at a time |
1. Boil the potatoes either in microwave or pressure cooker. For boiling in microwave just use a plain transparent polybag or ziploc without any print and add small washed potatoes to it and close it with a clipper or rubber band or just zip it. 4 small potatoes take 6 mins, 5 take 7 mins ,6 take 8 mins to boil. Take out carefully and then check with a spoon/fork.
2. Now cool them under cold water and peel them.
3. Next mash them effectively till they start coming together like a dough.
4. Add in the spices to the mashed potatoes. You may add par-boiled peas or crushed peanuts too to the dough. I however skipped that. Please add the spices lightly since more salt will make the dough gooey and too sticky.You may adjust the spices later on with chutneys and chaat masala 🙂
5. Take a non-stick pan and heat it on medium heat.
6. Now make small balls out of the dough and flatten them between your palms .Roll the flattened tikki in the arrowroot powder or corn starch or bread crumbs.
7. Now place them on the heated griddle or non-stick pan. Pour the oil around and over it to avoid sticking.
8. Let them cook on one side for 5 mins or until you see the sides getting lighlty browned.

  1. Once one side is cooked flip the other side with a wooden spatula slowly and shallow fry the other side as well.
  2. Cook both the sides like this way till they get crisped and a brown hue on both sides.
  3. Once cooked, take them out in a plate and add green dip, brown dip, curd , red chilli and chaat masala on the top and serve hot.
  4. You may garnish it with cilantro, Pomegranate, Boiled chickpeas(Chhole) or onion rings too.
