Banana Orange Pancakes

With Thanksgiving coming around the corner, I know most of us must be busy planning our list for shopping. 😀 So what to make in less time with less available ingredients which is kids-friendly too?

My daughter was craving for pancakes. So instead of using the store-bought mixture this time, I decided to make eggless home-made pan-cakes for her. She enjoyed them and tasted almost the same like store-bought with the exception of eggs and soda in them.

INGREDIENTS:
1. Orange Juice (freshly squeezed or store bought) – 2 cups
2. Ripe Bananas – 2
3. All purpose Flour (Maida) – 1 cup
4. Confectioner’s Fine powdered Sugar(caster sugar)/granulated sugar – 4 tsp
5. Safflower oil or any un-flavoured cooking oil – 3 tbsp
6. Salt – 12 tsp
7. Baking powder – 4 tsp
8. Vanilla essence – 1 tsp
9. Maple syrup/Honey/ Corn syrup – 3-4 tbsp for garnishing and flavor

METHOD:
|Preparation time : 10 -15 mins | Cooking time : 30 mins | Makes 6 Medium sized pancakes|

  1. Squeeze out fresh juice of oranges in a food processor or juicer or a hand squeezer. Mash the bananas with a fork or I simply added the bananas with the oranges in my food-processor.

  2. Mix all the dry ingredients baking powder , all -purpose flour,salt in a separate bowl and the wet in a separte bowl with a whisk.

  3. Now slowly add all the wet ingredients to the dry ones to form a thick pouring batter. Please note, that I have stressed on un-flavoured oil because for cakes and pan-cakes , sometimes the smell or flavor of oil takes over the smell of the flavors you are adding in them.

  4. Heat a non-stick skillet or shallow pan on medium. Add 2 tbsp oil and grease it.

  5. Once its heated , add a ladle -full of batter in the center and let it spread a little . Please don’t press with ladle to spread it in a thin layer. Pan-cakes taste better if thick .

  6. Let it cook on medium to low heat on one side till you see the upper surface bubbling all over. Lower the heat if you see extra browning of the bottom.
    After 2 mins :

  7. Once the bottom leaves the pan, slightly move your spatula below it to flip it on the other side.

  8. Let it cook on the other side and then pour some oil throughout its circumference or edge.

  9. When it is cooked on both side it will puff up in the center , take it out in a plate .

  10. Pour some honey or maple syrup on it just before serving . You may add butter in the center too.

P.S.: This recipe is flexible. You may skip the orange juice and add water instead. Also you may adjust the quantity of APF in it like if you prefer thick solution , add in more, and if you like thin solution add less.You may also reduce the quantity of bananas here.Also instead of increasing the sugar level in the recipe , just add in more syrup in the end. More sugar will make the batter too sticky , and it will get difficult to flip it .
Have them with few sips of hot tea or coffee as a supper in the evening or in the breakfast and enjoy!!
