> Dabeli is another Gujarati Street food which takes minimum time and efforts and leaves a lip-smacking long lasting taste on your tongue.

I was first introduced to this dish at my home , when my mom prepared it to welcome me back after marriage. I so loved its essence, taste that I couldn’t resist eating just one piece of Dabeli. If you have Pav breads (savory dinner rolls) and potatoes at home then making Dabeli is a good option.

So lets make a spicy, savory, sour, sweet meal which could be served as a side or as an entree(main course) on the table for friends and family. 😀 >

INGREDIENTS:
1. Pav Breads – 10 to 12
2. Boiled potatoes – 5-6 (big)
3. Tamarind-Dates dip (imli ki chutney) – 3 tbsp + 2 tbsp
4. Dabeli Masala (Everest) – 3 tsp
5. Pomegranate seeds (anar) – 12 cup
6. Salt – 2 tsp or to taste
7. Roasted peanuts ( bhuni mungfali) – 12 cup
8. Nylon sev / Aloo bhujia – 12 cup
9. Chopped cilantro leaves (dhaniya) – 12 cup
10. Shredded coconut – 14 cup
11. Garlic dip (lehun chutney) – 2 tbsp(optional)
12. Asafoetida(Hing) – a pinch
13. Cumin seeds(jeera) – 12 tsp
14. Lemon juice – 1 tsp
15. Chopped onions – 14 cup + 14 cup(for garnishing)
16. Water – 2 tbsp (optional)
17. Cooking oil – 2 tbsp
18. Butter or ghee(clarified butter)12 cup for roasting the pav

METHOD:
| Preparation time : 10-15 mins | Cooking time : 5 mins | Makes 10 – 12 Dabelis|

  1. Boil the potatoes in the pressure cooker or microwave and allow them to cool. Peel and mash them and keep them aside.

  2. Roast the peanuts in microwave or wok without oil and keep them aside. Shred the coconut too if you don’t have shredded coconut powder.

  3. Chop the onions finely and divide them into 2 portions. One half will be used in stuffing and the other in garnishing later on. Also peel the pomegranate and store them in a container.

  4. Now make a paste using dabeli masala, tamarind chutney and water in a bowl by mixing them all.

  5. Heat some oil in a wok or a non-stick pan.Add jeera and hing to it.

  6. Then add the onions and roast them well.

  7. When they turn golden brown, add the paste prepared in step 4 to it and stir well.

  8. Now add the mashed potatoes. Stir all well so that the potatoes are nicely coated and turn brown. If needed add water a tbsp at a time to mix the ingredients.

  9. Add salt, lemon juice and adjust the spice level by adding sugar or red chilly powder. You may add garlic dip too now if you like it , I however, have skipped it.

  10. Take this stuffing out in a thali (plate) and spread it all over.

  11. Now top it with pomegranate and sev.

For serving:
1. Heat some ghee or butter in a non-stick pan or griddle(tawa).
2. Slice the pav breads in the middle and keep them face down (inner side down ) on the griddle and roast them. At a time my griddle allowed 4 small pavs .
3. When they are roasted well, take them out and fill the stuffing prepared in it. Also add some peanuts, chopped onions, sev and anar on them and close them tightly.
4. Roast them again on both the outer sides as well or just warm them and serve hot.
The delicious Dabeli is ready to enjoy!! This appetizer is not only easy but it offers a range of varied tastes to you. 😀
