Sunshine Creamy Pedha

> Month of Festivals is here!!! October always mark the beginning of beautiful Fall season with cold winds, rains of festivities. For the starters, I thought of making a simple sweet which needs just two major ingredients and the delicious mouth -melting soft pedhas are ready in a go. I call them sunshine, because I hope to bring sunshine in all of your lives with these beautiful pedhas.
But as we say that kids are a better judge than us. My daughter called them Naan-khatai pedha looking at them.
For creating design, I used the end of a lint roller. 😉 you may use any mold or press for giving cute shapes. Yes, I have used no color. So their yellow color is totally natural. Now lets begin the recipe.. >

> INGREDIENTS:
1. 1 Pack Ricotta Cheese – 454 g
2. Nestle Table cream – 16 oz/ 235 ml
3. Sugar – 12 cup
4. Cardamom powder (elaichi) – 1 tsp
5. Saffron strands(kesar) – a pinch (15 -20 strands)
6. A spool top or lint cleaner top
7. Clarified butter(ghee)– 1 tbsp >
