Eggless Waffles

This time, when we went to Disneyland and the only breakfast that I with my daughter devoured was “The Waffles”. 😀 . We stayed at a regular Bed and Breakfast Hotel, where we were served with the American breakfast everyday. In spite of having them everyday , I didn’t got bored of them. It was then that I thought to remake them in my own style at home.
Since we avoid eggs most of the time, I thought of replicating the recipe without eggs. So I invested in a waffle-maker (Black and Decker) and gave it a try on a lazy Sunday. Moreover, recently I got to know waffle-maker’s various uses : apart from making waffles or cones we can make ornate Uttapams and pancakes. The only trick is to learn to use this waffle-maker efficiently. Otherwise, the sticking and splitting of waffles would compel you to dump it off. So here is my knack of making plain eggless Waffles.
INGREDIENTS:
1. All purpose flour or refined flour (Maida) – 2 cups
2. Baking powder – 2 tsp
3. Baking soda – 1 tsp
4. Salt – a pinch
5. Sugar (white granulated or powdered sugar) – 2⁄3 cup
6. Melted butter (salted or unsalted) – 4 tbsp
7. Vanilla extract – 2 tsp
8. Pancake syrup or agave or honey or maple syrup – 3 to 4 tbsp
9. Home made Buttermilk – 2 cups
METHOD:

Take a bowl and sift flour ,baking soda and baking powder through a sieve in it. Sifting always helps in discarding the lumps beforehand. Also add salt to it and mix them with a whisk.
In another bowl melt some butter. Add sugar to it. Whisk them together till it gets creamy.
Now add the dry ingredients in the butter-sugar bowl. Whisk them or stir them to get an even layered thick batter. The batter for the waffle is ready. If you wish you may add some orange juice or mashed banana or crushed strawberries, or blueberries or raisins to add some fruit punch to it.
Preheat the waffle maker till the light goes off. Then drizzle some oil or non-stick spray on both sides of the maker.
Add about 4 tbsp of batter in the maker and spread it as evenly as possible in all the corners and cavities of the maker. Let it cook for a minute till it develop bubbles all over. Cover it gently and let it cook for 5 mins or till you see some steam coming out from the sides.
Lower the temperature a little ,if you feel they getting browned quickly. I have a setting of low to high in waffles. So beginning with medium , I turn the knob to low after 3 mins. Its important that it is cooked form both sides ,to come out intact without sticking. So if you face the problem of sticking waffles, don’t panic. It happened with me too, a little extra patience is the key to the problem.
Once it is cooked from both sides, it usually takes 8-10 mins; open the maker gently, and if it is sticking to the upper plate,close it again. Let them cook or another 2 mins. Take them out in a plate. I usually cut it in 4 parts, since it helps me to take it out of the maker. If ,however, you have a round waffle maker, you can take it out whole intact and then cut it in parts.
Drizzle some honey or maple syrup on them and have them with a glass of milk or smoothie.
